  • 2 cups fresh spinach leaves
  • 1 cup cremini mushrooms, finely chopped
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese (fresh)
  • Salt and pepper to taste
  • 2 tbsp olive oil (for sautéing)
  • 2 tbsp balsamic vinegar (for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped mushrooms and spinach; cook until wilted. Stir in Parmesan cheese, season with salt and pepper.
  3. Butterfly the beef tenderloin by slicing it horizontally without cutting through. Open it like a book.
  4. Spread the filling evenly on one side of the beef and fold over to enclose the stuffing tightly. Secure with kitchen twine.
  5. Sear each side of the stuffed tenderloin in an oven-safe skillet over medium-high heat until browned (3-4 minutes per side). Transfer to the preheated oven and roast for 25-30 minutes or until desired doneness.
  6. Let rest for 10 minutes before slicing into medallions and serving with balsamic drizzle.
