  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 4 tbsp unsalted butter, melted
  • 1 cup Gruyère cheese, shredded
  • 1 cup panko breadcrumbs
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium baking dish with butter.
  2. Layer half of the sliced sweet potatoes in the dish, followed by half of the cranberries. Repeat with remaining sweet potatoes and cranberries.
  3. In a bowl, whisk together heavy cream, melted butter, salt, pepper, and nutmeg. Pour evenly over layered vegetables.
  4. Top with shredded cheese and mix breadcrumbs with thyme; sprinkle over cheese layer.
  5. Cover with foil and bake for 45 minutes. Remove foil in the last 15 minutes to brown the top.
  6. Serve warm alongside your favorite holiday entrees.
