  • 2 medium sweet potatoes (about 500g)
  • 1 cup canned chickpeas (drained and rinsed)
  • 1 small red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lemon
  • 2 tsp chaat masala
  • 2 tbsp tamarind chutney
  • 1/3 cup roasted peanuts (chopped or whole)

Instructions

  1. Preheat oven to 425°F (220°C). Peel and cube sweet potatoes, toss with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
  2. In a bowl, combine chickpeas, red onion, cilantro, and lemon juice. Mix well.
  3. Once sweet potatoes are roasted, let cool slightly then combine with the chickpea mixture in a large bowl.
  4. Add chaat masala and tamarind chutney; toss gently until well coated.
  5. Just before serving, stir in roasted peanuts for added crunch.
