  • 1 cup fresh cranberries
  • 2 medium fresh oranges (for juicing and zesting)
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce
  • 3 garlic cloves (minced)

Instructions

  1. Prepare your ingredients by washing and drying the chicken breasts. Season with salt and pepper. Zest and juice the oranges, setting both aside.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about one minute. Stir in cranberries, honey, soy sauce, orange juice, and zest. Simmer for 5-7 minutes until cranberries burst.
  4. Return chicken to the skillet, spooning sauce over it. Simmer together for an additional 3-4 minutes.
  5. Serve on plates drizzled with remaining sauce; garnish with extra orange zest or herbs if desired.
