Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together almond flour, all-purpose flour, powdered sugar, and salt until blended.
  3. In another bowl, cream softened butter. Add vanilla and mix well. Gradually add the dry ingredients until a dough forms.
  4. Shape small portions of dough into discs, place about half a teaspoon of raspberry jam in the center, and fold edges over to encase the jam.
  5. Place cookies on baking sheets and bake for 12-15 minutes until lightly golden at edges.
  6. Cool on wire racks and dust generously with powdered sugar before serving.
