  • 1 liter full-fat milk
  • 200 g sugar (adjust to taste)
  • 4 tbsp ghee (clarified butter)
  • 0.5 tsp cardamom powder
  • 100 g mixed nuts (almonds and cashews), chopped

Instructions

  1. Grate the fresh carrots and set aside.
  2. In a heavy-bottomed pan, combine grated carrots with milk; bring to a boil over medium heat, stirring occasionally.
  3. Once the milk reduces by half, stir in sugar until dissolved.
  4. Add ghee and cardamom powder; cook until the mixture thickens and leaves the sides of the pan.
  5. Fold in chopped nuts and cook for a few more minutes.
  6. Serve warm or chilled.
