  • 1 cup orzo pasta
  • 2 large sweet onions (yellow or Vidalia), sliced
  • 2 cups low-sodium beef broth
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. In a skillet over medium heat, sear each breast in olive oil for about 4-5 minutes per side until golden brown.
  3. Remove the chicken and sauté sliced onions in the same skillet on medium-low heat until caramelized (about 15-20 minutes).
  4. In a separate pot, boil beef broth and cook orzo according to package instructions until al dente (8-10 minutes). Drain excess liquid.
  5. In the prepared baking dish, combine cooked orzo, caramelized onions, Worcestershire sauce, garlic powder, and seared chicken; mix well.
  6. Sprinkle cheeses on top and bake for 25-30 minutes until bubbly and golden brown. Let rest for five minutes before serving.
