  • 12 Medjool dates
  • 4 oz feta cheese, crumbled
  • 2 oz Parmesan cheese, grated
  • 2 tbsp honey
  • 1/2 cup walnuts, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice each Medjool date lengthwise without cutting all the way through and remove the pits.
  3. In a bowl, mix the crumbled feta, grated Parmesan, chopped parsley, thyme, and salt until combined.
  4. Stuff each date generously with the cheese mixture and place them seam-side down on the baking sheet.
  5. In another bowl, combine chopped walnuts and honey until coated, then sprinkle over the stuffed dates.
  6. Bake for 15-20 minutes until golden brown and bubbly. Let cool slightly before serving.
