  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk (or almond milk)
  • 6 oz dark chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a mini muffin tin by greasing or lining it with paper cups.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and nutmeg.
  3. In another bowl, cream softened butter until fluffy. Gradually add the sugar mixture until light and airy.
  4. Mix in eggs one at a time and then stir in milk until smooth.
  5. Fold the dry ingredients into the wet mixture gently until just combined.
  6. Spoon batter into muffin cups about two-thirds full and bake for 15-18 minutes or until a toothpick inserted comes out clean. Cool completely before glazing.
  7. For the ganache, heat dark chocolate and heavy cream in a saucepan over low heat until melted and smooth. Drizzle over cooled cakes.
