  • 2.5 lbs beef tenderloin, trimmed
  • 1 cup fresh breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil (divided)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, add 2 tablespoons of olive oil. Sauté the onions and bell pepper until soft. Stir in minced garlic and herbs; cook until fragrant. Remove from heat.
  3. In a bowl, mix the sautéed vegetables with breadcrumbs and Parmesan cheese.
  4. Butterfly the beef tenderloin by slicing it lengthwise without cutting all the way through. Open it like a book and season both sides with salt and pepper.
  5. Spread the stuffing evenly over one side of the beef. Roll tightly and secure with kitchen twine or toothpicks.
  6. Heat remaining olive oil in an oven-safe skillet over medium-high heat. Sear the rolled tenderloin on all sides until browned.
  7. Transfer to the preheated oven and roast for about 25-30 minutes or until internal temperature reaches 130°F (54°C) for medium-rare.
  8. Allow the roast to rest for 10 minutes before slicing and serving.
