  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1 cup cranberry sauce (homemade or store-bought)
  • 8 oz white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter, then press into the base of a springform pan.
  2. In a bowl, blend softened cream cheese and sugar until smooth. Mix in sour cream, then pour over crust.
  3. Bake for 50-60 minutes until edges are set but center jiggles slightly. Turn off oven and let cool inside for an hour.
  4. For cranberry jam: Cook cranberries with sugar and water over medium heat until thickened (10-15 minutes).
  5. Melt white chocolate chips and let cool slightly. Whip heavy cream until soft peaks form; fold in chocolate.
  6. Once cheesecake has cooled completely, spread cranberry jam on top, followed by white chocolate mousse. Chill for at least four hours before serving.
