  • 1 cup unsalted roasted pistachios
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 cup brewed espresso (cooled)
  • 24 ladyfingers (Savoiardi)
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew espresso and let cool completely.
  2. Whip heavy cream in a bowl until soft peaks form.
  3. In another bowl, mix mascarpone cheese and sugar until smooth. Fold in whipped cream gently.
  4. Dip ladyfingers briefly into cooled espresso and layer them in a serving dish. Spread half of the mascarpone mixture over the ladyfingers.
  5. Chop half of the pistachios and sprinkle over the mascarpone layer. Repeat layering with remaining ingredients.
  6. Chill for at least four hours or overnight. Before serving, dust with cocoa powder and garnish with remaining chopped pistachios.
