  • 1/4 cup light brown sugar
  • 2 tbsp unsalted butter

  1. Preheat your oven to 400°F (200°C). Scrub sweet potatoes, prick with a fork, and place on a parchment-lined baking sheet.
  2. Bake sweet potatoes for 45-60 minutes until tender. Let cool slightly.
  3. In a skillet over medium heat, combine diced apples, cranberries, brown sugar, cinnamon, and butter. Cook for about 5-7 minutes until apples soften.
  4. Cut each sweet potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin layer in the skin.
  5. Mix the sweet potato flesh with the apple-cranberry mixture and chopped pecans until well combined.
  6. Spoon the mixture back into each sweet potato skin and return to the oven at 350°F (175°C) for an additional 15-20 minutes.
