  • 1/4 cup granulated sugar (50g)
  • 1 tsp vanilla extract
  • Red and green gel food coloring
  • 1 cup buttercream frosting (for filling)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar to remove lumps.
  3. Whip egg whites in a separate bowl until soft peaks form, then gradually add granulated sugar until stiff peaks develop.
  4. Gently fold dry ingredients into the meringue until the batter flows like lava.
  5. Pipe small rounds onto prepared baking sheets, leaving space between each.
  6. Let sit for 30 minutes to form a skin, then bake for 15-20 minutes or until easily lifted from parchment.
  7. Cool completely before filling with buttercream frosting.
