  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • 2 cups kale or spinach (optional, added at the end)

Instructions

  1. Rinse the lentils under cold water.
  2. In a large pot over medium heat, heat olive oil. Sauté the onion until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Add carrots, celery, and bell pepper; stir frequently for about 7–10 minutes until softened.
  4. Sprinkle in cumin and paprika along with salt and pepper; mix well.
  5. Pour in vegetable broth and add rinsed lentils. Bring to a boil, then reduce heat to low and cover. Simmer for 30–40 minutes until lentils are tender.
  6. Stir in kale or spinach if using just before serving.
