  • 1 cup breadcrumbs
  • 1 large egg
  • 1 cup fresh cranberries (divided)
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, salt, pepper, and half of the fresh cranberries. Mix until just combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until cooked through and browned on top.
  5. Meanwhile, prepare the sauce by combining remaining cranberries, brown sugar, garlic powder, soy sauce, and thyme in a saucepan over medium heat. Stir until cranberries burst and sauce thickens.
